I really hope you all are planning on taking Valentine’s Day off from you hardcore diets that you have been rocking since the new year because I have these two AMAZING treats that you have to try.  They are definitely not diet friendly but I can guarantee you they are worth an extra mile on the treadmill, maybe two.  I make these every year for my family on Valentine’s Day and everyone is in love with them.

Ok, so are you ready for recipe number one?

Cheesecake Stuffed Chocolate Dipped Strawberries

2lbs of Strawberries

For the chocolate dip-

1 12oz bag of chocolate chips ( I used dark chocolate )

1/2 teaspoon coconut oil (you can use Crisco also)

For cheescake filling-

1 block of cream cheese (softened)

1/2 cup of powdered sugar

1 teaspoon of vanilla

Wash and completely dry strawberries.  I dry them off with paper towels.  If you don’t it will make your melted chocolate seize up when you are in the dipping process.  Cut the tops of and use a paring knife to hollow out the middle a little bit.  Dry off the inside of the strawberries after this step. Next you need to melt your chocolate.  Put your chocolate in glass bowl or measuring cup with the 1/2 teaspoon of coconut oil and microwave in 30 second increments.  Stir after every 30 seconds.  My chocolate took about one minute and 15 seconds in total to fully melt.  Be sure to really watch it you don’t want to burn your chocolate it becomes bitter.  You can also melt your chocolate over a double boiler if you prefer that method.  Now you are ready to dip your strawberries.  I use small tongs and dip them all the way up to about 1/2 and inch from the top of the strawberry.  Then I place the dipped berry on a wax paper lined cookie sheet. You can add sprinkles or whatever next if you choose. Once all the strawberries are dipped I put them in the fridge to chill and harden while I work on the cheesecake filling.  For the cheesecake filling.  I throw the softened cream cheese, powdered sugar, and the vanilla in my Kitchen Aid and whip it up.  I then put the mixture into a piping bag with a decorator tip and pipe the filling into my berries. You can use a ziploc bag and snip the end off to pipe the filling into your strawberries if you don’t have any piping bags.  I then pop the filled berries back into the fridge to chill for at least 30 minutes before serving.

Chocolate Dipped Cookie Dough

 

For the Chocolate Dip-

1 bag of 120z chocolate chips ( I used dark chocolate)

1/2 teaspoon of coconut oil or Crisco

For the cookie dough balls-

1 stick of butter (softened)

1/2 cup of granulated sugar

1/2 cup of brown sugar

1 teaspoon of vanilla

1 1/4 cups of flour

2 Tbs milk

1 cup mini chocolate chips

 

Cream together softened butter, sugars, and milk.  Mix in flour, Add Vanilla and mix.  Stir in chocolate chips.  Roll into one inch balls and place on wax paper lined cookie sheet.  Place in fridge for at least 30 minutes.   Melt chocolate chips and coconut oil in glass bowl or measuring cup in the microwave in 30 second increments.  Stirring well in between.  Be careful not to burn chocolate, it will become bitter.  It took me a total of one minute and 15 seconds to melt my chocolate.  Grab your cookie dough balls from the fridge and begin dipping them.  You can use popsicle sticks or tooth picks if you choose or you can just drop the balls in the chocolate and spoon chocolate over all the cookie dough and remove the fully coated ball with the spoon and place it back on wax paper.  Once all of them are dipped you can add sprinkles if you choose and place them in the fridge for cooling for at least 30 minutes before serving.
