These mini frittatas are one of my favorite things to make for my kiddos to eat in the mornings. They are healthy (depending what your put in them) and they can grab a few and gobble them down in no time. You can make them in quantity so you can store them in your fridge for the entire week. You can also freeze them but in my experience with that it does make the texture seem a little more rubbery.
You can really put all kinds of ingredients as the filler for your frittatas. Ham and cheese, spinach and cheese, bacon and cheese, tomato and mozzarella with a little fresh basil on top, all the veggies, none of the veggies (lol). So many choices!
First thing. You most definitely want to get these baking cups and only these baking cups! Seriously, I’ve tried a lot of other kinds and they stick to the egg and your frittatas will come out in pieces. You want to use baking cups to save your manicure and your time. Because, who wants to waste time scrubbing baked on anything out of tiny little muffin cups? I can’t think of anyone that deserves that kind of torture. I buy the baking cups from Target but I have ordered them from Amazon here.
Here is what you need to make these:
- Egg Whites or Eggs scrambled (12 for a 12 cup muffin tin)
- Your choice of ingredients for fillers for your frittatas. Cheese, veggies, bacon, ham, any meat of your choice, etc.
- muffin tin pan
- baking cups (trust me, lol)
First step: Pre heat your oven to 350 degrees and put the baking liners in your muffin tin.
Next step: Add your filling ingredients to your baking cups. Whatever you choose. Again, there are so many options.
Then, get your eggs ready. Pour your eggs, I used egg whites (just easier). Pour enough to cover all of your filler ingredients just a little bit below the top of the baking liner.
Put those babies in the oven and bake for 22-25 minutes. They are going to puff up quite a bit but they will shrink a little when you take them out to cool.
All Done! Best to let them cool for about five to ten minutes. Pour some coffee and a fill up the kiddo’s cups and enjoy. All your leftovers can go into a covered storage container and put in to the fridge. They will last about a week.
