Pumpkin anything is ALMOST as near and dear to my heart as chocolate. So, Here in the Jones house pumpkin flavored and/or scented anything is welcome to an extended stay straight through the Christmas season. I just recently posted a picture to Instagram that included some of my favorite pumpkin muffins ever. They are super easy to make because they are made with cake mix so there is minimal measuring and only a few ingredients. I found this recipe on Pinterest not too long ago and made a couple of modifications to it. Here is the recipe with my modifications which of course contains the addition of chocolate. I can’t help it. Chocolate makes everything better.
Pumpkin Muffin Recipe
1 Spice Cake Mix
1 can pumpkin
3 eggs
1/4 cup of Milk
1 cup of mini chocolate chips -1 1/2 cups if you like to live dangerously.
Mix Ingredients together and scoop into muffin tins makes 18-22 muffins.
Streusel Topping
1/2 cup flour
1/2 cup of brown sugar
6 TBS butter
mix flour and brown sugar together, soften butter then fold in to flour and brown sugar mixture. Place about a teaspoon of the streusel topping into each muffin cup.
Bake at 350 degrees for about 18-22 minutes.
